  • 2 bags of tortilla chips
  • 1 can (32-ounces) refried beans
  • 8 ounces sharp Cheddar cheese, grated
  • 8 ounces Monterey Jack cheese, grated
  • 1 jar of sliced jalapenos
  • cherry tomatoes, sliced thin
  • green onions, sliced thin
  • sour cream, to taste
  • salsa, to taste



  • Preheat oven to broil setting.
  • Spread a thin layer of refried beans on each chip and place onto a baking sheet lined with foil.
  • Sprinkle generously with cheese, and top each chip with a sliced jalapeno.
  • Place on the middle rack of the oven and broil until edges are slightly browned and cheese is bubbly, about 1 – 2 minutes.
  • Remove from oven and top with sliced tomatoes and green onions.  Serve with salsa and sour cream

    I love chips & dip, and maybe a glass of wine to wash it down. Can’t drink to much, though.

    Usually just a cup of tea. I read a lot, better that I don’t snack a lot along with it.

    I am trying for just a cup of hot tea or glass of water, but it usually ends up being popcorn.

    I really try not to snack when I read. Just keep cold water handy. If the munchies do get to me, peanut M&Ms are my favorite. I also love partially frozen Dr. Pepper “slushies.”

    Honestly for me it’s popcorn and tea, though most of the time if the book is really good I forget about everything other than turning the pages…

    Snack . . . Really anything I get my hands on. Because when I am reading, I don’t even notice what I might be eating. Recently, I was reading a book and I was eating a piece of bread with a pesto spread.

    That nacho recipe is a sample of the kind of snack I like but I may not eat that while reading a book as I’m entirely too messy! Ditto for a lot of snacks I might eat but sometimes I do succomb to something in the line of chips if they aren’t messy.
